Chili Cookoff at Stone Mountain Park

One more year under our belt.....we had a great time at the Chili Cookoff this year.  This was our 11th year.
I think we did a great job.  We came in 38th out of 235 in Chili and 6th out of 141 in Brunswick Stew.  Yay!!!  My brother and husband do all the cooking and they did a great job.
Its been a long 3 days...when we got back we slept for 2.  Now looking forward to fall cleaning the house,  decorating for Halloween and getting ready for our Open House for My Girls Boutique.

Dang Kickin Buffalo Chicken Chili

                                 Football Food

I can’t tell you how easy this was, and so full of flavor. It is a must try for every busy Dang woman out there!
Slow Cooker.....Dang Kickin Buffalo Chicken Chili

Dang Kickin Buffalo Chicken Chili
2 1/2 lbs (or 3 cups) chicken breast cut into 1″ chunks
1 cup chopped onion
1 cup chopped celery
1 cup chopped carrots
4-5 cloves garlic, minced
2 (15 oz) cans diced tomatoes, drained
1 (15 oz) can black beans, drained and rinsed
1 cup chicken broth
1/2 tsp salt
1 tsp cayenne (1 tbsp for some real Dang heat)
1 tsp paprika  (1 tbsp  to make you jump out of your seat)
1/2 tsp chili powder
1/2-1 cup your favorite buffalo wing suce
blue cheese crumbles, for topping (optional)

Add chopped veggies and garlic to the slow cooker or crock pot. Pour the 2 cans of drained tomatoes in. Add black beans, chicken, broth and spices. Don’t add the buffalo sauce yet!!!
Cook on high 4-5 hours or on low 8-10 hours. Before serving, stir in the buffalo sauce to your desired liking. a minimum of 1/2 cup but add more to make it the desired flavor you like.  Add blue cheese crumbles to individual servings. Don’t put it in the pot, it’ll stink up the whole place!
This one passes the test with flying colors. Easy, super delish, and it cooked itself while I got to focus on other important things in life…..
